Indian chutney ingredients

  • 4 lb Unripe Mangoes
  • 2 c Chopped onion
  • 2 c Raisins
  • 2 c Dried Currants
  • 4 c White vinegar
  • 4 c Brown sugar
  • 1 1⁄2 c Sugar, granulated
  • 8 T Chopped ginger
  • 4 Dried hot peppers, crumbled
  • 2 Lemon rind
  • 4 garlic cloves
  • 4 T Mustard seed
  • 2 T Salt
  • 4 T Cinnamon
  • 1 T Turmeric
  • 1⁄2 T Ground cloves
  • 1⁄2 T Cayenne pepper

Cooking Indian chutney

1. Combine and let sit overnight.
2. Bring to a boil stirring constantly, until the mangos and onions are transparent.
3. Add water if necessary to prevent burning.
4. Adjust flavor for hotness and tartness.
5. Pack hot into half pints, process 5 minutes in boiling water bath.
