Hungarian letcho ingredients

  • 2 med Onion, chopped
  • 2 T Oil
  • 2 large Green Pepper
  • 1 T Paprika
  • 3 large Tomatoes, chopped
  • -OR-
  • 16 oz Tomatoes, canned
  • Salt
  • Pepper
  • -to taste
  • 1⁄2 t Carroway seed
  • 4 Franfurters
  • -OR-
  • 6 sli Salami

Cooking Hungarian letcho

1. In a large frying pan, saute the onions in vegetable oil, until limp.
2. And peppers, and saute, mixing well, until limp, and the onions are slightly browned.
3. Add paprika and mix well for a few minutes.
4. Add tomatoes, and bring mixture to a boil.
5. Reducei heat and simmer, covered, for ten minutes.
6. Add salt and pepper, to taste.
7. The carraway seeds are optionl.
8. In a separate sauce pan, boil frankfurters (salami) in water for five minutes.
9. Add boiled meat to vegetagle mixture.
10. Return to a simmer, mixing well.
11. (can be served immediated, or reheated.


I don\'t know where this idea of using green bell peppers in Letcho came from? But if you use anything other than Sweet Hungarian yellow peppers, you are not getting the flavour it should have. The other ingrediants are OK with many variations to it. But it must be one of the Sweet Hungarian yellow pepper variaties. Try it, the taste is like night and day.


No caraway seeds in Lecso!!
And no bell peppers either!
And no canned tomatoes!!

You should start with some bacon, cut into small pieces. Do not let them crisp.
When enough fat is rendered you add chopped onions.
When onions are translucent add the sliced peppers and salt them. This will bring out their juices. Let them cook until somewhat wilted, then add tomato pieces, bit of salt again.
When there is enough juice from the tomatoes sprinkle with paprika.
Slice those frankfurters (if you have to use them, a good , garlicky polish sausage is a better choice)
and add to Lecso.
Cook for a few minutes longer and now you can do several things.
You can serve it with cooked rice on the side.
Or you can mix in 1-2 beaten eggs and cook until eggs set.
Or, you could add half-cooked rice into the dish when you add the tomatoes and cook everything together.
