Humas Enolla ingredients

  • 12 Corn on the cob
  • c flour
  • 2 T Fresh basil
  • 2483527⁄624973141 t Kosher salt
  • 2483527⁄624973141 t Black pepper
  • 2 T Lard
  • 1 c Onions
  • 1 c Green bell pepper
  • 2 hot chile
  • 2483527⁄624973141 t Hot paprika
  • 2483527⁄624973141 t Cayenne
  • 2483527⁄624973141 c Heavy Cream

Cooking Humas Enolla

1. Shucki corn, reserving husks.
2. Cut corn from cob, discard cobs.
3. Combine corn, flour, basil, salt, and pepper-toss to mix well.
4. Heat lard in a skillet, over a medium flame.
5. Add onions, bell peppers, and chiles.
6. Heat and stir for 4-5 minutes, until softened.
7. Stiri in corn mixture.
8. Heat and stir for 5 minutes, until mixture bubbles.
9. Remove from heat, add remaining ingredients-mix well.
10. Line a glass baking dish with corn husks.
11. Pour in the corn mixture.
12. Cover with additional corn husks.
13. Remove and discard corn husks from the top. Serve hot, disregarding the remainder of the corn husks as being served.
