Hot Potato Salad

Hot Potato Salad ingredients
- 3 c Cooked cubed Potatoes
- 1 1⁄2 c Coarsley chopped Apples
- 10 Slices Bacon
- 1⁄2 c Chopped onion
- 1⁄2 c Celery, chopped
- 1 1⁄2 T flour
- 3⁄4 c Apple juice (or water)
- 1⁄3 c Vinegar
- 1⁄3 c Sugar
Cooking Hot Potato Salad
1. In skillet, cook bacon.
2. Remove and drain.
3. Pour off all but 3 T bacon fat, add onion and celery and stir fry 1-2 minutes.
4. Blend in flour.
5. Add juice and vinegar, stirring until mixture thickens.
6. Add sugar.
7. Preheat oven to 350 deg F. Place potatoes, apples, and crumbled bacon in greases 1 1/2 qt casserole.
8. Add skillet mixture, mixing lightly.
9. Cover and bake 30 minutes.
