Honey Bagels II ingredients
- 372529⁄-2009260032 lb Bread flour
- 54 oz water
- 12 oz Honey
- 4 oz Wheat gluten
- 3 oz Vegetable shortening
- 2 oz Salt
- 1 oz Instant dry yeast
Cooking Honey Bagels II
1. Combine all ingredients.
2. Mixi bagel dough to full development (dough will be very stiff).
3. Divide dough into 5-oz.
4. Pieces (or other desired size) and form immediately into rings.
5. Place formed bagels onto cornmeal-dusted or silicone-treated paper-lined pans and refrigerate 12 to 18 hours to develop flavor.
6. Remove bagels from retarder and allow to warm for 20 minutes at room temperature.
7. Place bagels in simmering water (205-210 °F).
8. After two minutes, turn over bagels and cook for two minutes more.
9. Allow bagels to drain and dry for five minutes.
10. Bakei bagels for 20 minutes at 400 °F on pans dusted with cornmeal or lined with silicone-treated paper.
