High-Fiber Bread Quiche ingredients

  • 4 sli High fiber bread; stale
  • 1 c Low fat cottage cheese
  • 2 Onion, minced
  • 13 1⁄2 oz Can evaporated skim milk
  • 3 Eggs
  • 1 T parsley, minced
  • Salt and pepper to taste
  • 2 T Bacon bits; optional

Cooking High-Fiber Bread Quiche

1. Line 10 pie pan with bread.
2. Spread with cottage cheese and onions.
3. Combine remaining ingredients except bacon bits, in blender.
4. Cover; blend until smooth.
5. Pour over onion layer.
6. Sprinkle with bacon bits.
7. Bakei at 425 for 35-40 minutes.
8. Cut into 8 wedges to serve.
9. Per Serving: Calories--129.
