Healthier caramel corn ingredients

  • 3⁄4 c Maple syrup
  • 3 T Butter (see note)
  • 2 T Sucanat (opt., see note)
  • 1⁄4 t Salt
  • 1⁄4 t Baking soda
  • 1⁄4 t vanilla
  • 1⁄2 c Nuts (opt., adds fat)

Cooking Healthier caramel corn

1. Preheat oven to 300 degrees.
2. Combine syrup, butter, sucanat and salt in saucepan until butter is melted.
3. Boil without stirring 3 minutes.
4. Remove from heat and stir in baking soda and vanilla (add nuts if using).
5. Pour over popcorn.
6. Mixi well.
7. Place on 2 large cook sheets.
8. Bakei for 15 minut4es.
9. Cool. Break into pieces.
10. Freezes well.
11. Notes: ~ butter is easier to digest than margarine.
12. Can be reduced to 1 tablespoon.
13. ~ sucanat is a natural sweetener found in health food stores.
14. Can be omitted.
15. ~to save time, purchase a 16-ounce bag of pre-popped plain popcorn.
