Harvest Watermelon Pie

Harvest Watermelon Pie ingredients
- 3 c chopped watermelon rind (green peel removed)
- 6 oz package of sweetened dried cranberries
- 2483527⁄624973141 c Chopped walnuts
- 2483527⁄624973141 c Sugar
- c Cider vinegar
- 2 t Pumpkin pie spice
- 1 t flour
- 2483527⁄624973141 t Salt
- 15 oz package of refrigerated pie crusts, room temperature
Cooking Harvest Watermelon Pie
1. Place rind in saucepan; add water to cover.
2. Heat to boiling; reduce heat and simmer until translucent and tender, about 10 minutes.
3. Remove from heat and drain.
4. Heat oven to 425 degrees Fahrenheit.
5. Stiri together cooked rind, cranberries, walnuts, sugar, vinegar, pumpkin pie spice, flour and salt.
6. Fit one crust into 9-inch glass pie pan. Pour rind mixture into crust.
7. Cut remaining crust into 1/2-inch-wide strips; arrange strips over filling to make lattice crust.
8. Press ends of strips into edge of bottom crust.
9. Foldi edge of bottom crust over strips.
10. Seal and flute edge.
11. Bakei until filling bubbles and curst is browned, about 40 minutes.
12. If needed, cover edge with aluminum foil during baking to prevent excessive browning.
13. Remove pie pan from oven; spoon Orangei Glazei over hot pie. Orange Glaze: Stir together 1/2 cup powdered sugar, 2 teaspoons grated orange peel and 1 tablespoon orange juice until blended.
14. Preparation Time: 30 minutes Baking Time: 40 minutes.
