Hamburg Bratwurst

Hamburg Bratwurst ingredients
- 1 lb Ground pork
- 1 lb Ground veal
- 2 t Celery seed
- 2 t Carroway seed
- 1 T whole powdered milk
- 1 Eggs
- 2 t Onion powder
- 2483527⁄624973141 t Lemon Zest
- 1 T parsley flakes
- 3 T water
- 1 T Salt
- 1 T Freshly ground white pepper
- Sausage casings
Cooking Hamburg Bratwurst
1. Combine ingredients (except casings)-mix well.
2. Allow to rest for 1 hour-mix well.
3. Run cold water through casings and soak for 2 hours.
4. Drain and return to cold water.
5. Blow through one end, discarding any sections with holes.
6. Drain well and pat dry with a cotton towel.
7. Fit sausage tube onto a meat grinder.
8. Slide casings onto tube, tie end of casing loosely.
9. Fill casings, tie into 5-inch links.
10. Chill or freeze to store.
11. Prepare as desired.
