Groundnut stew ingredients
- 2 c Chopped onion
- 2 T Peanut oil
- 1⁄2 t Cayenne
- 1 t garlic clove, pressed
- 2 c Chopped cabbage
- 3 c Cubed sweet potatoes
- 3 c Tomato juice
- 1 c Apple juice
- 1 t Salt
- 1 t Grated fresh ginger
- 1 T Cilantro, chopped
- 2 Chopped tomato
- 1 1⁄2 c Chopped okra
- 1⁄2 c Peanut butter
Cooking Groundnut stew
1. Sautei the onions in the oil for 10 minutes.
2. Stiri in the cayenne & garlic & saute for a couple more minutes.
3. Add cabbage & sweet potatoes.
4. Cover & saute for a few more minutes.
5. Mixi in the juices, salt, ginger, cilantro & tomatoes.
6. Cover & simmer for about 15 minutes, until the sweet potatoes are tender.
7. Add the okra & simmer for another 5 minutes.
8. Stir in the peanut butter.
9. Place the pot on a heat diffuser & simmer gently till ready to serve.
10. Add more juice if the stew is too thick.
