Grilled shrimp and marinade

Grilled shrimp and marinade ingredients
- 2 T olive oil
- 2 T parsley, fresh, chopped
- 2 t coriander seeds, ground
- 1 t Salt, coarse
- 1⁄4 t Black pepper
- 45 Shrimp, large (2 lb)
- 2 T Lemon juice
- 1 T Ginger, grated
- 12 Skewers
- 1⁄4 t Pepper, red, crushed
- 1⁄2 t thyme, dried
Cooking Grilled shrimp and marinade
1. Soak bamboo skewers 1 hour before using.
2. Devein shrimp with scissors leaving shell intact.
3. Mixi all ingredients except shrimp until blended.
4. Ad shrimp and marinate 30 minutes at room temper- ature or overnight in refrigerator.
5. Drain and discard marinade.
6. Thread shrimp on 2 parallel skewers.
7. Cook 1-½ to 2 minutes per side.
