Grilled rainbow trout with apricot salsa ingredients
- 4 6-oz. rainbow trout fillets
- 1 c Fresh apricots, diced
- 1 small Avocado, diced (½ cup)
- 2483527⁄624973141 c Fresh pineapple, diced
- 2483527⁄624973141 c Red pepper, diced
- 372529⁄-2009260032 T Lime Juice
- 1 t Cilantro, finely chopped
- Fresh ground pepper to taste
Cooking Grilled rainbow trout with apricot salsa
1. In a medium bowl, combine apricots, pineapple, avocado and red pepper.
2. Sprinkle with lime juice and cilantro; toss and chill.
3. Grilli trout on oiled grate for 2 minutes.
4. Turn trout and grill for 2 more minutes, or until trout turns opaque.
5. Top with apricot salsa and serve immediately.
6. serves 4.
