Green tomato sweet relish ingredients

  • 12 large Green tomatoes, quartered
  • 6 Green peppers, quartered
  • 2 Sweet red peppers, quartered
  • 3 large onions, quartered
  • 2 t Pickling salt
  • 4 c Sugar
  • 3 c Cider vinegar, (5% acicity)
  • 2 t turmeric, ground
  • 6 oz Jar prepared mustard

Cooking Green tomato sweet relish

1. Position knife blade in food processor bowl; add vegetables, a few at a time.
2. Process until ground.
3. Transfer to a large nonaluminum bowl; sprinkle with pickling salt, and let stand 3 to 4 hours.
4. Drain.
5. Combine sugar, vinegar, and turmeric in a dutch oven; cook over medium heat, stirring constantly, until sugar dissolves.
6. Add vegetables, and bring to a boil.
7. Stiri in mustard, and cook, stirring constantly, until thickened.
8. Pack hot mixture into hot jars, filling to ½-inch from top. Remove air bubbles; wipe jar rims.
9. Cover at once with metal lids, and screw on bands.
10. Proces in boiling-water bath 15 minutes.
11. Yield: 7 (12 oz) jars.
