Green beans in olive oil

Green beans in olive oil ingredients
- 1 lb Green beans
- 1 med Onion, chopped
- 2 Chopped tomato
- 1 t Salt
- 1⁄3 c Extra-virgin olive oil
- 3 1⁄2 t Sugar
- ½-2 c water
Cooking Green beans in olive oil
1. Trim beans & cut into 3 pieces, wash & drain.
2. Put onion & tomato into a heavy pan. Sprinkle with salt & rub in lightly with fingers.
3. Stiri in the beans, olive oil & sugar, mix well.
4. Cover & cook for 15 minutes over medium heat.
5. Stir occasionally.
6. The beans will lose their colour & soften.
7. When all the moisture has been absorbed, stir-fry the beans for 2 to 3 minutes.
8. Add ½ cup water, cover & simmer for 40 to 50 minutes, till the beans are tender.
9. Add more water if necessary, ½ cup at a time.
10. When cooked, the dish should be very moist but not watery.
11. Serve cold as part of a buffet.

Great recipe
Nice recipe I really love green beans, I never thought to use sugar. Here is a similar recipe that I like, where the writer adds green-beans, potatoes, tarragon, mushrooms and a few other healthy items. The flavor is unbelievable.
