Greek chicken and rice pilaf ingredients

  • 1⁄3 c olive oil
  • 1 large onions, diced
  • 2 clv garlic, crushed
  • 2 1⁄2 lb To 3-lb. chicken, cut into 8 pieces
  • 4 c chicken broth OR stock
  • 2 c long-grain white rice
  • 1 T Brown sugar
  • 1⁄4 c Tomato paste
  • 2 t Salt
  • 1⁄2 t white pepper
  • 1 t Dried oregano
  • 1⁄2 t Ground fennel
  • 2 Bay leaves

Cooking Greek chicken and rice pilaf

1. In pressure cooker, heat oil. Add onion and garlic and saute in hot oil over med-high heat 2 mins.
2. Add chicken pieces and cook 2 mins.
3. , stirring occasionally.
4. Stiri in broth, rice, brown sugar, tomato paste, salt, pepper, oregano, fennel, and bay leaves.
5. Secure lid. Over high heat, develop steam to high pressure.
6. Insert a heat diffuser between pan and heat.
7. Reducei heat to maintain pressure and cook 9 mins.
8. Release pressure accdg.
9. To manufacturer"s directions.
10. Remove lid. Shake chicken and rice mixture well and stir to distribute cooking liquid.
11. Discard bay leaves.
