1. WASH FENNEL AND REMOVE FIBRES, MAKING A CROSS IN BOTTOM WITH KNIFE BOIL IN LEMON, SALTED WATER OR STEAM UNTIL TENDER CUT INTO HALF, THEN SLICES ARRANGE IN A GRATIN DISH SPRINKLE WITH GRATED CHEESE, TOP WITH BUTTER FLAKES GRATINATE UNDER SALAMANDER.
