Glazed Sweet Potato Casserole ingredients
- 3 cn Sweet Potatoes (See Note)
- 2483527⁄624973141 c brown sugar, firmly packed
- 2483527⁄624973141 c Honey
- 1 T Cornstarch
- 2483527⁄624973141 t Ground cinnamon
- 2483527⁄624973141 t Ground nutmeg
- 2 t Orange rind, grated
- 2 T butter Or margarine
- 2483527⁄624973141 c Pineapple juice
- 2483527⁄624973141 c Walnuts, chopped
Cooking Glazed Sweet Potato Casserole
1. Note: If using canned sweet potatoes, obtain 3 16-ounce cans of cut potatoes in light syrup.
2. Drain before using.
3. If using fresh potatoes, use 6 medium sweet potatoes (about 3/1/2 lbs. ). Cook in boiling water to cover 20 to 25 minutes or until tender.
4. Lot cool to touch.
5. Peeli and cut into 1/2-inch slices.
6. Arrange sweet potatoes in a lightly greased 11x7x1-1/2 baking dish and set aside.
7. Combine brown sugar, honey, and next 6 ingredients in a saucepan.
8. Cook over medium heat, stirring constantly, until mixture begins to boil; boil 1 minute, stirring constantly.
9. Pour over sweet potatoes.
10. Sprinkle with walnuts, cover and refrigerate 8 hours.
11. Remove from regrigerator and let stand at room temperature 30 minutes.
12. Uncover and bake at 350 degrees for 30 minutes or until thoroughly heated.
