Ginger Pork Satay ingredients

  • 12 lb pork tenderloin
  • 1 1⁄2 t Salt
  • 1 t Freshly ground black pepper
  • 1⁄3 c Ginger
  • 2 T Powdered ginger
  • 1⁄3 c Ground coriander
  • 1 1⁄2 t Dry mustard
  • 1⁄3 c Ground cumin
  • 2 T Ground allspice
  • 1⁄3 c olive oil
  • 3 c Scallions
  • 1⁄2 c Honey
  • 3⁄4 c Prepared horseradish
  • 1 1⁄2 c soy sauce
  • 1 1⁄2 c Dry sherry
  • 3 c Creamy peanut butter
  • 2 T Monosodium glutamate
  • 1⁄3 c Fresh lime juice

Cooking Ginger Pork Satay

1. Combine pork, salt, pepper, gingers, coriander, mustard, cumin, and allspice in a covered container-mix well.
2. Cover and chill for 4-8 hours.
3. Remove pork and reserve marinade.
4. Thread onto bamboo skewers.
5. Place a rack into a roasting pan. Pour hot water into roasting pan (well below surface of rack) Place skewers onto rack.
6. Combine reserved marinade and remaining ingredients in a saucepan, over a medium-low flame.
7. Bring just to a boil, reduce heat, and simmer 4-5 minutes.
8. Remove from flame and allow to cool.
9. Straini through a fine chinois.
10. Serve skewered pork hot, with strained sauce to the side.
