Genuine Texas Chili

Genuine Texas Chili ingredients
- 3 lb chuck roast -- trimmed of all fat
- 2 lb Lean ground beef
- 2 large Onion, coarsely chopped
- 5 clv garlic, finely chopped
- 3 T Cumin seeds
- 1 T Salt
- 2 t Freshly ground black pepper
- 1⁄2 t cayenne -- --or--
- 1⁄2 t Ground red pepper
- 3 T Chili powder
- 2 28 oz ca tomatoes -- peeled, whole
- 2 15 oz ca Tomato sauce
- 14 oz red enchilada sauce
- 1 1⁄2 c water
Cooking Genuine Texas Chili
1. Grindi beef with coarse blade of grinder or cit into small pieces, larger than regular ground beef.
2. Combine meats, onions and garlic in large kettle or Dutch oven.
3. Browni, stirring occasionally, about 10 minutes.
4. Add seasonings, stirrin g to mix well.
5. Shredi tomatoes by hand so that both tomatoes and juices will fa ll into pot. Stiri in tomato and enchilada sauce.
6. Bring to a boil.
7. Reducei heat and simmer over low heat 1 1/2 hours.
8. Add water and cook 1 1/2 hours longer.
9. Cool. Skimi grease.
10. Adjust seasonings, if necessary.
11. Serve hot with crackers or hard rolls.
