Futari (Coconut-Peanut Pumpkin)

Futari (Coconut-Peanut Pumpkin) ingredients
- 2 c Pumpkin, peeled & cubed
- 2 c Sweet potatoes, cubed
- 3 T Onions, finely chopped
- 1 T Oil
- Juice of 1/2 lemon
- 1⁄2 t cloves
- 1 t Salt
- 1 1⁄2 c coconut milk
- 1 t Cinnamon
Cooking Futari (Coconut-Peanut Pumpkin)
1. Fryi the onion into oil until golden.
2. Combine with the pumpkin & the sweet potatoes in a heavy pot. Add lemon juice, cloves, salt & 1 c coconut milk.
3. Cover & simmer for 10 minutes.
4. Uncover, stir gently & add cinnamon.
5. Cook a further 15 to 20 minutes.
6. Stiri often to prevent sticking.
7. Add more milk if necessary.
8. VARIATION: Thin 1/4 c peanut butter with 1/2 c hot water, adding water a little at a time.
9. Add more water to make a cup & use in the recipe instead of coconut milk.
