Fruit-glazed chicken ingredients

  • 1 c Finely chopped onion
  • 1 Clove garlic, minced
  • 1 cn (20 oz) crushed pineapple
  • -drained
  • 1⁄2 c dark molasses
  • 2 T Prepared mustard
  • 2 t Grated lemon zest
  • 2 t Instant chicken broth
  • -grnules
  • 1 t Ground ginger
  • 1 t Salt
  • 1 ds Ground red (cayenne) pepper
  • 2 Broiler-fryer chickens (2
  • -½ to 3 lbs ea), cut up
  • 4 Bananas

Cooking Fruit-glazed chicken

1. Makes 6 to 8 servings Sautei onion and garlic in butter in large skillet over medium-high heat until soft, about 5 minutes.
2. Stiri in remaining ingredients except chicken and bananas.
3. Heat to boiling; reduce heat.
4. Simmeri, uncovered, stirring occasionally, 10 minutes.
5. Cool to room temperature.
6. Arrange chicken pieces in single layer in shallow baking pan. Pour sauce over chicken.
7. Refrigerate, covered, 1 hour.
8. Heat oven to 375°F.
9. Bakei chicken, basting every 10 to 15 minutes with sauce, until almost tender, about 1 hour.
10. Peeli bananas; cut into ½-inch-thick diagonal slices; place between chicken pieces.
11. Bast with sauce.
12. Bake 10 minutes.
13. * remove chicken and bananas to wam serving platter.
14. Degrease sauce; pour over chicken.
15. *for a darker glaze, place chicken under broiler 2 to 3 minutes.
