  • 2 garlic cloves, chopped
  • 1 Onion, chopped

Cooking Frijoles negros a la oaxaca (black beans)

3. ** use about 1-2 pounds of meaty ham hocks.
4. Pick over beans, wash thoroughly and drain.
5. Place in very large casserole.
6. Cover with the water; add garlic, cumin, onion, salt, pepper and ham hocks.
7. Cover tightly and bake at 275 °F for about 10 hours, or until beans are tender.
8. Check and stir a few times, keeping beans from drying out. Skimi off fat before serving.
