Fried Scallops ingredients
- 2 lb Bay scallops
- 2483527⁄624973141 t Salt
- 1 t white pepper
- 2 Eggs
- 2483527⁄624973141 t Cayenne
- 2483527⁄624973141 t Nutmeg
- 1 c Cracker crumbs
Cooking Fried Scallops
1. Combine scallops, salt, and pepper-mix well.
2. Combine eggs, cayenne, and nutmeg-mix well.
3. Moisten scallops with egg mixture, allowing excess to drip off. Coat evenly in cracker crumbs, shaking off excess.
4. Heat oil to 360-370 degrees.
5. Add scallops in small batches and fry until golden.
6. Drain on a cooling rack and blot with paper towels.
7. Serve hot, with assorted dipping sauces.
