  • 30 g Ginger
  • 1 seasoning (salt+pepper)
  • 1⁄2 dl oil, peanut
  • 1⁄5 dl Oil, sesame
  • 600 g Chinese vegetables, frozen
  • 1⁄10 Fish stock
  • 1⁄10 dl fish sauce (chinese)
  • 1 dl Mirin (rice wine)
  • 3 Egg yolks
  • 1 seasoning (salt+pepper)

1. MARINATE JOHN DORY FILETS WITH SOYA SAUCE AND CHOPPED GINGER, SALT AND PEPPER HEAT PEANUT OIL IN FRYING PAN AND SAUTE FILETS UNTIL DONE KEEP THEM HOT IN A GRATIN DISH IN THE SAME FRYING PAN, HEAT THE SESAME OIL AND SAUTE THE CHINESE VEGETABLES AND SEASON THEM WITH SALT AND PEPPER DRESS VEGETABLES OVER THE READY FISH FILETS IN A MIXING BOWL, COMBINE THE FISH STOCK, FISH SAUCE, MIRIN, EGG YOLKS SALT AND PEPPER OVER A BAIN MARIE WHISK THIS MIXTURE UNTIL YOU HAVE REACHED A CREAMY SABAYON ADJUST SEASONING OF THE SABAYON AND POUR OVER THE READY FISH.
