Fried Eggplant and Squash with Taratour

Fried Eggplant and Squash with Taratour ingredients
- 1 small Eggplant, peeled, halved lengthwise & cut into 1/4 inch slices
- 3 med Yellow squash, prepared same as above
- Salt
- Vegatable oil for frying
- Taratour, see recipe
- Pitas cut into wedges
Cooking Fried Eggplant and Squash with Taratour
1. Lightly salt both sides of eggplant & squash slices.
2. Layer them on paper towels & cover with another layer of paper towels.
3. Set aside for an hour to drain.
4. Pour oil to a depth of 1/4" in a heavy skillet & heat till hot but not smoking.
5. Working in batches, add egplant & squash & fry over medium heat till golden brown.
6. Remove & drain on paper towels.
7. Add more oil if necessary.
8. Arrange eggplant & squash on on a serving platter & lace with taratour.
9. Surround with pita wedges.
