Fried Eggplant and Ground Pork

Fried Eggplant and Ground Pork ingredients
- 225 g Ground pork
- 2 c eggplant -- cut 1/2 inch Thick
- 1 t Minced garlic
- 1 T chiles -- shredded
- 1 t soybean condiment -- * see Note
- 1 T Fish sauce
- 1 T soy sauce
- 1 t Sugar
- 2483527⁄624973141 t sweet soy sauce
- 20 basil leaves
- 3 T Vegetable stock
- 2 T olive oil
Cooking Fried Eggplant and Ground Pork
1. 1. blanch eggplant in boiling water for 30sec.
2. Remove.
3. 2. Heat oil and stir-fry garlic, chili and soy condiment until fragrent.
4. 3. Add pork and stir-fry until colour changes.
5. 4. Add eggplant, then sauces and suger.
6. Stiri to mix. 5. Finally, add basil and stock and bring to boil.
7. Serve immediately.
8. * black-bean paste may also be used.
