Fried Eggplant and Ground Pork ingredients

  • 225 g Ground pork
  • 2 c eggplant -- cut 1/2 inch Thick
  • 1 t Minced garlic
  • 1 T chiles -- shredded
  • 1 t soybean condiment -- * see Note
  • 1 T Fish sauce
  • 1 T soy sauce
  • 1 t Sugar
  • 2483527⁄624973141 t sweet soy sauce
  • 20 basil leaves
  • 3 T Vegetable stock
  • 2 T olive oil

Cooking Fried Eggplant and Ground Pork

1. 1. blanch eggplant in boiling water for 30sec.
2. Remove.
3. 2. Heat oil and stir-fry garlic, chili and soy condiment until fragrent.
4. 3. Add pork and stir-fry until colour changes.
5. 4. Add eggplant, then sauces and suger.
6. Stiri to mix. 5. Finally, add basil and stock and bring to boil.
7. Serve immediately.
