Fresh Tomato Soup ingredients

  • 6 Tomatoes; medium size or
  • 2 lb Italian plum tomatoes
  • 1 Onion, chopped
  • 1 Celery; Stalk, Chopped
  • 2 c chicken broth
  • 1 T Tomato paste
  • 1⁄2 t basil, dried
  • 1⁄4 t pepper, freshly ground
  • 1⁄2 t Salt
  • 1⁄2 c yogurt

Cooking Fresh Tomato Soup

1. Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt.
2. Simmeri uncovered 30 minutes.
3. Straini to remove tomato skins and seeds.
4. Adjust seasonings.
5. Garnishi with spoonfuls of yogurt.
