Fresh Strawberry Cheesecake ingredients
- 372529⁄-2009260032 c Graham cracker crumbs
- 6 T Sugar
- 2483527⁄624973141 c butter, melted
- 2 Env. Unflavored gelatin
- 3 T water
- 372529⁄-2009260032 c Cottage cheese
- Grated rind juice of 1 lemon
- 2 Eggs; separated
- 372529⁄-2009260032 c half half
- 1 qt Strawberries
Cooking Fresh Strawberry Cheesecake
1. Combine the cracker crumbs, 2 tablespoons of the sugar and the melted butter; mix well.
2. Press the crumb mixture firmly and evenly onto the bottom of an 8 in ch springform pan. Chill until firm.
3. Stiri the gelatin into the water in a small metal bowl.
4. Set in hot water until the gelatin dissolves.
5. Combine the cheese, lemon rind and juice, egg yolks, h alf half, gelatin and the remaining 4 tablespoons sugar in the blender.
6. Whirl until smooth.
7. Transfer to a bowl.
8. Beat the egg whites until stiff and fold into the cheese mixture.
9. Pour into t he springform pan and refrigerate until chilled and set. Remove the cheesecake from the pan and arrange the strawberries on top. Decorate with whipped cream if desired.
10. 8 servings.
