Fresh Homemade Catsup ingredients
- 6 lb roma tomato
- 1 c Onions
- 2 T garlic Puree
- 1 c Apple cider vinegar
- 1 c Sugar
- 1 t Ground coriander
- 1⁄2 t Cayenne
- 1⁄2 t Ground nutmeg
- 1⁄4 t Ground cinnamon
- 1 Bay leaf
- 1 t Kosher salt
Cooking Fresh Homemade Catsup
1. Combine tomatoes, onions, and garlic in a food processor process to a fine puree Straini mixture through a fine chinois, into a saucepan Add remaining ingredients-mix well Place over a low flame and simmer for 2 hours, until reduced to 4 cups Remove and discard bay leaf Cool in a water bath Cover and chill for up to 20 days.
2. Serve slightly chilled or at room temperature.
