French Meatball Soup ingredients

  • 2 T Rice
  • 2 oz beef, round, ground
  • 1 T egg, raw, beaten
  • 1 T Onion, grated
  • 1⁄4 t garlic
  • 1⁄4 t parsley
  • 1⁄4 t Nutmeg
  • 2 T wine, dry, red
  • 1 1⁄4 c Beef broth
  • 1 Salt to taste
  • 1 pepper, to taste

Cooking French Meatball Soup

1. Stove Top: Add rice to 1 cup water.
2. Boil 5 minutes; drain well.
3. Blend rice, ground round, egg, onion, garlic, parsley, and nutmeg.
4. Form into small meatballs.
5. Add wine to broth; bring to boil.
6. Drop meatballs into hot broth, one to at time.
7. Bring to boil again; reduce heat.
8. Simmeri 20 minutes.
9. Add salt and pepper.
10. Microwave: Add rice to 1 cup salted water.
11. Bring to a boil.
12. Hold 5 minutes; drain well.
13. Combine meatball ingredients as above.
14. Bring wine and broth to a boil.
15. Drop meatballs into hot broth, one at time.
16. Bring to a boil again.
17. Hold 10 minutes.
18. Add salt and pepper.
19. Crockpot: Make meatballs as above and simmer in crockpot on Low for 2 hrs.
