Frankfurt Bratwurst

Frankfurt Bratwurst ingredients
- 1 lb Ground pork
- 1 lb Ground veal
- 2 t Celery seed
- 2 t Carroway seed
- 1 T lowfat powdered milk
- 1 Eggs
- 2 t Onion powder
- 1⁄4 t Lemon Zest
- 1 T parsley flakes
- 3 T water
- 1 t Kosher salt
- 1 T Freshly ground white pepper
- Sausage casings
Cooking Frankfurt Bratwurst
1. Combine ingredients-mix well.
2. Allow to rest for 1 hour-mix well.
3. Fit sausage tube onto a meat grinder.
4. Slide casings onto tube, tie end of casing.
5. Loosely fill casings, tie at regular intervals.
6. Refrigerate up to two days or freeze up to 60 days.
7. Prepare as desired.
