Fettunta Toscana (Grilled Bread with Tomates and Basil) ingredients

  • 4 large Ripe tomatoes
  • 1⁄4 c basil leaves, torn
  • 6 sli Country style bread, cut 1/2" thick & halved
  • 3 large garlic cloves, lightly
  • - crushed
  • Salt and pepper
  • 4 T olive oil

Cooking Fettunta Toscana (Grilled Bread with Tomates and Basil)

1. Wash the tomatoes & cut them in half.
2. Remove as many seeds as possible & dice them.
3. Set them in a small bowl & combine with the basil leaves.
4. Grilli or broil the bread slices & turn them so that both sides are light brown.
5. Rub each slice with a garlic clove.
6. Spoon some of the tomato mixture over the bread, sprinkle with the salt & pepper & drizzle with olive oil. Serve immediately.
7. VARIATION: Fettunta co Rucola.
8. Replace the basil with 1 small bunch of arugula, stems removed & leaves finely diced.
