Fassoulatha (Bean Soup) ingredients

  • 1 c Large, dried white beans
  • 2 Quarts of water
  • 1 c Sliced celery (1/2 Pieces)
  • 2 c Chopped onion
  • 4 Medium carrots, cut in 1/2 Slices
  • 1⁄2 c Chopped parsley
  • 1 T Tomato paste
  • 1 c olive oil
  • 1 T Crushed oregano
  • 3 T Wine vinegar

Cooking Fassoulatha (Bean Soup)

1. Bring beans to a boil in the water.
2. Reducei heat and simmer for an hour.
3. Add remaining ingredients.
4. Simmeri for 2 more hours.
5. Add salt and pepper to taste.
6. Serve with crusty bread.
