Fajita Quesadilla ingredients

  • 2 T Vegatable oil
  • 1 c quartered, sliced onion
  • 1 c green or red bell pepper strips
  • 1 lb boneless, skinless chicken breast halves
  • 1 pk ORTEGA® Fajita Seasoning Mix
  • c water
  • 10 flour tortillas
  • 372529⁄-2009260032 c 4 cheese Mexican blend

Cooking Fajita Quesadilla

1. HEAT 1 tablespoon vegetable oil in large skillet over medium-high heat.
2. Add onion and bell pepper; cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender.
3. Add chicken; cook, stirring occasionally, for 4 to 5 minutes or until chicken is no longer pink.
4. Stiri in seasoning mix and water.
5. Bring to a boil.
6. Reducei heat to low; cook for 3 to 4 minutes or until mixture thickens.
7. SPREAD 1/2 cup fajita mixture on one tortilla; sprinkle with 1/2 cup cheese.
8. Place second tortilla evenly over mixture.
9. Heat remaining oil in large skillet over medium-high heat.
10. Place quesadilla in skillet; cook for 2 to 3 minutes on each side or until golden brown and cheese is melted.
11. Repeat with remaining ingredients.
