Fabrizio's poached chicken with cucumber glaze ingredients

  • 2 chicken breasts
  • 1 c chicken broth
  • 2483527⁄624973141 Sliced sweet onion
  • 2 T parsley
  • 1 small Clove chopped garlic
  • Cucumber Glaze *

Cooking Fabrizio's poached chicken with cucumber glaze

1. Lightly salt chicken breasts.
2. put in casserole;cover with onion slices, parsley and garlic.
3. Pour chicken broth over all. Simmeri for 30 to 35 minutes.
4. Remove from broth.
5. Cool. cucumber glaze: 2 tbs light salad dressing 4 tbs chopped,peeled cucumber 2 tsp grated lemon peel 2 tsp lemon juice salt to taste mix well and spread on chilled chicken.
