Exotic Greens with Sautéed Shiitake Mushrooms and Balsamic Vinaigrette ingredients
- 2 T olive oil
- 1 T water
- 2 t Balsamic vinegar
- 1 t Dijon-style mustard
- 1 t Minced shallots
- 1 T Fresh basil
- 1⁄2 t Sugar
- 1⁄4 t Black pepper
- 1⁄8 t Salt
- 1 T olive oil
- 6 Shiitake mushrooms
- 6 c mixed exotic greens
Cooking Exotic Greens with Sautéed Shiitake Mushrooms and Balsamic Vinaigrette
1. WHISK first nine ingredients in small bowl to blend.
2. (Vinaigrettei can be prepared 4 hours ahead.
3. ) COVE and refrigerate.
4. BRING to room temperature and whisk well before using.
5. HEAT 1 tablespoon of olive oil in small, heavy skillet over medium heat.
6. ADD mushrooms and sauté 2-3 minutes until tender.
7. PLACE greens in a large bowl and add vinaigrette.
8. TOSS to coat, garnish with mushrooms.
