- 2 t butter (10gm)
- 1⁄4 c Canned tomatoes (50 gm)
- 1⁄2 t chives, chopped (2gm)
- Salt and pepper to taste
Cooking Eggplant with tomatoes
1. Browni the eggplant in butter.
2. Add salt and pepper.
3. Heat tomatoes in a separate pan and pour over eggplant.
4. Sprinkle with chopped chives.
