Eggplant with tomatoes ingredients

  • 2 t butter (10gm)
  • 1⁄4 c Canned tomatoes (50 gm)
  • 1⁄2 t chives, chopped (2gm)
  • Salt and pepper to taste

Cooking Eggplant with tomatoes

1. Browni the eggplant in butter.
2. Add salt and pepper.
3. Heat tomatoes in a separate pan and pour over eggplant.
4. Sprinkle with chopped chives.
