Eggplant with Olives ingredients

  • olive oil
  • 1 Onions
  • 3 garlic cloves
  • 1 Eggplants
  • 1 Green bell pepper
  • 2 T Tomato paste
  • 1⁄3 Dry red wine
  • 1 t Dried basil
  • 1 t Dried oregano
  • 2 t Sugar
  • Salt and pepper
  • 3 T Balsamic vinegar
  • 1 Marinated artichoke hearts
  • 12 Kalamata olive

Cooking Eggplant with Olives

1. Sautei onion and garlic in oil. Add eggplant, green onion, tomato paste, basil, oregano, and sugar and cover.
2. Stiri once or twice while the eggplant cooks all the way through.
3. Add the balsamic vinegar.
4. Add the artichoke hearts and the sliced olives.
5. Serve with pasta, quinoa, rice or a hearty bread.
