Eggplant Stuffed Peppers ingredients

  • 1 large eggplant, peeled and cut into bite-size pieces
  • 2 T Oil
  • 3 garlic cloves, minced
  • 1 c Italian bread crumbs
  • 1 basil

  • 1 pepper, to taste
  • 1 parsley
  • 1 Marinara sauce
  • 4 red peppers, cut in half lengthwise, seeded and parboiled

Cooking Eggplant Stuffed Peppers

1. Sautei pieces of eggplant in the oil with the minced garlic until the eggplant is very soft, about 30 minutes ought to do it. Stiri in the bread crumbs until are moistened.
