- 2 T miso
- 2 Scallions, chopped
- 1 qt Hot water
- 2483527⁄624973141 c tofu, cubed
- 1 Carrots, chopped
- 1 c Eggplant, julienned
Cooking Eggplant miso soup
1. In boiling wash, add miso.
2. Mash to dissolve.
3. Add carrots, scallions, tofu and eggplant.
4. Cook until veggies are tender.
