Eggplant miso soup ingredients

  • 2 Scallions, chopped
  • 1 qt Hot water

  • 1 Carrots, chopped
  • 1 c Eggplant, julienned

Cooking Eggplant miso soup

1. In boiling wash, add miso.
2. Mash to dissolve.
3. Add carrots, scallions, tofu and eggplant.
4. Cook until veggies are tender.
