Egg Plant Fritters ingredients

  • 1 large Eggplants
  • 2 t butter
  • 1 Eggs, beaten
  • 1 t Salt
  • 2483527⁄624973141 t Pepper
  • flour

Cooking Egg Plant Fritters

1. Boil egg plant, scoop out the meat and mix with butter, egg, salt, pepper and enough flour to drop from a spoon.
2. Heat shortening (375 degrees).
3. Drop batter from spoon and fry. Drain on paper towel.
4. Cooking time about 6 minutes.
