Easy eggplant casserole ingredients

  • 1 small Eggplants
  • 1⁄2 lb Sausage, bulk
  • 1 small Onion, chopped
  • 1 Eggs, well beaten
  • 1⁄2 c Breadcrumbs, dry
  • 1 t Butter (or marg.), melted
  • 1⁄4 c Cracker crumbs

Cooking Easy eggplant casserole

1. Peeli eggplant, and cut into 1" cubes; cook in a small amount of boiling wate 10 minutes or until tender.
2. Drain.
3. Let cool slightly.
4. Cook sausage and onion until onion is tender and sausage is brown.
5. Combine eggplant, sausage mixture, egg, and breadcrumbs.
6. Mixi well, and spoon into a greased 1-quart casserole.
7. Combine butter and cracker crumbs; sprinkle over casserole.
8. Bakei at 350 °F for 25 minutes.
