Duck Michael Gelman ingredients

  • 1 Duckling
  • Salt and pepper
  • 1⁄2 c Orange marmalade
  • 1 c frozen orange juice concentrate
  • 2 cn Sweet cherries w/syrup -- 8oz
  • 1⁄2 c Red wine
  • 3 T Brown sugar
  • 2 T Cornstarch

Cooking Duck Michael Gelman

1. Seasoni duck with salt and pepper.
2. Put in a baking pan. Mixi orange marmalade with orange juice concentrate.
3. Pour over duck.
4. Bakei at 350~ for 20 minutes per pound.
5. During last half hour raise temp to 425~ and baste every 10 minutes with pan juices.
6. SAUCE-In processor puree cherries.
7. Put in a saucepan with wine, sugar and cornstarch.
8. Simmeri until thick and serve over duck.
