Dried tomato-shallot butter ingredients

  • 1 c Butter or margarine -- at
  • Room temperature
  • 1⁄4 c Sun-dried tomatoes
  • Oil-packed -- drained and
  • Minced
  • 2 T Shallots -- minced
  • 1⁄2 t Coarsely ground black
  • Pepper

Cooking Dried tomato-shallot butter

1. In a bowl, beat butter, tomatoes, shallots and pepper until blended.
2. Serve at room temperature.
3. If made ahead, cover and chill up to 3 days.
4. Makes about 1 cup.
