Double-Baked Potatoes

Double-Baked Potatoes ingredients
- 6 Baking potatoes, well scrubbed
- 1 red bell pepper-split, seeded, roasted or grilled, then chopped
- 1⁄2 c low fat mozzarella cheese, chredded
- 2 T Plain low fat yogurt
- 1 t Tabasco
- Pinch nutmeg
- Freshly ground black pepper
- 2 T Bread crumbs
Cooking Double-Baked Potatoes
1. Preheat the oven.
2. Bakei six potatoes until done, then let them cool.
3. Smash two potatoes with the skins on. Take the remaining four potatoes and hollow out the centers.
4. Set the skins aside.
5. Add to the smashed potatoes.
6. Mixi in the red pepper, corn, mozzarella cheese, yogurt, tabsco, nutmeg, and black pepper.
7. Fill the four potato skins with the six mix. Sprinkle bread crumbs on top. Bake for 15 to 20 minutes until hot and light brown on top.
