Double Melon Soup

Double Melon Soup ingredients
- 1 small Cantaloupe, peeled, seeded &
- -chopped
- 2 T Orange juice
- 1 t Orange rind, grated
- 2 T Sweet sherry
- 1⁄2 Honeydew melon, peeled,
- -- seeded & chopped
- 2 T Lemon juice
- 3 T Mint, chopped
- Mint sprigs, to garnish
Cooking Double Melon Soup
1. Pureei the cantaloupe with the orange juice, orange rind & the sherry.
2. Cover & chill for at least 3 hours.
3. Puree the honeydew melon with the lemon juice & mint.
4. Cover & chill for at least 3 hours.
5. Pour equal amounts of each melon mixture into chilled serving bowls for a pretty half orange, half green effect.
6. Garnishi with mint sprigs & serve chilled.
