Dijon shredded carrot salad ingredients
- 2 T Lemon juice
- 1 t Dijon mustard
- 1 T Extra virgin olive oil
- 2 garlic cloves, minced
- 1 1⁄2 T parsley
- 6 small Carrots, grated
- -- (sweetest you can find!)
- 1 bn Arugula
- - torn into bite-size pieces
Cooking Dijon shredded carrot salad
1. Whiski together lemon juice, mustard and olive oil. Blend in garlic and parsley.
2. Pour dressing over grated carrots and toss to coat well.
3. Serve over arugula.
