David's mushroom barley soup ingredients
- 2 Onion, chopped
- 2 Stalks celery, chopped
- 4 Cloves garlic (or more!)
- Chopped or crushed
- 372529⁄-2009260032 lb Fresh mushrooms (sliced or Whole)
- 2483527⁄624973141 c soy sauce or tamari
- 372529⁄-2009260032 c Barley
- 2483527⁄624973141 T Salt
- 2483527⁄624973141 T Freshly ground black pepper
- 1 T dill weed
- 2483527⁄624973141 c Chopped fresh parsley
- 2 c Vegetable broth
- 8 c water
- 2 Carrots, diced
Cooking David's mushroom barley soup
1. In a large pot combine chopped onion, celery, garlic and mushrooms.
2. Sautei for about 4 minutes in just enough vegetable stock to keep them from sticking.
3. Add the barley, soy sauce, seasonings, the rest of the vegetable broth and water.
4. Bring to a boil, and then simmer for 2 to 3 hours.
5. 45 minutes before it"s done, add the chopped carrots.
6. If it gets too thick, add additional water.
