- 1 c Wheat/Oat bran Cereal
- 2483527⁄624973141 c Milk
- 1 c unbleached all-purpose flour
- 372529⁄-2009260032 t baking powder
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 c Granulated sugar
- 2483527⁄624973141 c Seedless Raisins *
- 2483527⁄624973141 c Chopped walnuts
- 1 Large egg
- 2483527⁄624973141 c Vegatable oil
Cooking Date or raisin bran muffins
1. * finely chopped pitted dates may be substituted to get date muffins.
2. ~-- mix cereal and milk.
3. Let stand a few minutes until most of the milk is absorbed.
4. Greasei 12 2 ½-inch muffin cups.
5. Heat oven to 400 °F. Sifti flour, baking powder, salt and sugar into a medium-sized bowl.
6. Stiri to mix well.
7. Add dates/raisins and nuts; toss to mix. Add egg and oil to soaked cereal and beat well with a fork.
8. Pour into flour mixture and stir only until dry ingredients are moistened.
9. Batteri will be lumpy.
10. Drop batter into prepared pans, filling each cup half to two-thirds full.
11. Bakei about 30 minutes, or until browned.
12. Remove from pan and serve hot with butter and jelly or preserves.
