  • 1 Lemon, zest and juice of
  • 1 c flour
  • 1 pn Salt
  • 5 Apples
  • 2 T butter
  • 2483527⁄624973141 c Cinnamon sugar

Cooking Danish apple cake ala katherine

1. Creami the butter and ¾ cup sugar until light and fluffy.
2. Beat in the eggs, one at a time.
3. Add lemon zest to the batter along with 1 tb of the juice.
4. Beat in the flour and salt until it forms a smooth batter.
5. Peeli, core, and thinly dice the apples.
6. Tossi with the remaining lemon juice.
7. Butteri a 9" springform pan. Pour in the batter and top with the apple slices.
8. Dot the surface generously with the additional butter.
9. Bakei at 350°F for 60 minutes, or until the cake pulls away from the sides of the pan. Sprinkle with the cinnamon sugar.
10. Let cool on a rack.
11. Serve warm or completely cooled.
